「看來你一年也不用吃牛腩了!」友人在看過漢記那碟份量超大的坑腩及崩沙腩時說。
「是的,我感覺是血管中也有牛腩在流動...」我曾經是如此認為的。
言猶在耳,但明顯地,牛魔王還是「牛性不改」,轉頭就統統忘記了。天氣不知怎的,忽然轉冷,還下起雨來,惱人之至。在「低碳」後的我,遇到這個天氣,手腳冰冷,怪難受的。下午決定要吃點暖身的食物,又在0.01秒的時間,想起這間新店子。
想起就要吃,那能等?拿起傘,乘巴士再轉地鐵,在油麻地站鑽出來,行不到兩步,就到了這裡。這裡不大,但是日人客也不多,可能是一場「攔門雨」的關係。

進店,未坐下,已經問「我要淨腩,有沒有坑腩、爽腩或崩沙腩?」「未炆起...」「吓,咁有咩腩?」「清湯腩都好架,我地d牛腩係...」「好,就清湯腩,好的部位才切來!」「放心啦,我地d牛腩...」「快!我識分的!」貴一點的價錢,我願意付,因為一吃,就知拿來的是蟲定龍!
不旋踵,碟淨腩來了。看樣子,似大雜燴,腩邊有一點,爽腩有一點,坑腩又有一點,真的是「精銳盡出」。先挑瘦一點的來吃。鮮濃的牛肉味,據說這裡用的是鮮牛肉,應該是的。肉質方面,就算是瘦肉,也鬆化,炆得「夠身」,好吃!

呀,還有,這裡爽腩、坑腩及崩沙腩的供應時間,大約是在二時半之後,六時半之前,在這段時間之間來,穩陣一點 ~ 阿姐話的。

Do you know if there are proper English translations for 坑腩、爽腩 and 崩沙腩? I know these (particularly the last two) are the holy grail of brisket cuts, and seem to be more unique to the Hong Kong style of brisket and noodles, better than toro...(whereas in Taiwan for beef noodle soup, they're more interested in shank cuts with criss cross tendons for their own noodle soup renditions).

回覆刪除I don't think there are specific English names for 坑腩、爽腩 and 崩沙腩. They are different sections / cuts of the brisket areas, so in English they are just beef briskets. You need a more lengthy explanation in English to distinguish between the 3.
And I truly believe that Cantonese cuisine has the best interpretation and execution of beef briskets. Much like Siu Mei and wonton, you can hardly find other places that have better ones than those in Hong Kong!

今天剛好在油麻地,吃牛腩當晚飯。嘗了爽腩米/瘦清湯腩,都不錯,只是河粉有點「UP(米放舊了那種味)「味,泡在湯一會後好一點。牛腩的份糧少了點,下次還是叫淨腩好了,叫他們什麼腩都斬一點上來。
