Morton's and chains like Ruth Chris do no...KC,<br /><br />Morton's and chains like Ruth Chris do not dry age their steaks. For Morton's, they claim that they "prime-age" their steaks, which is just wet-aging. Wet aging only tenderizes the meat texture but it doesn't impart the beefy "mineral" flavor resulted in dry-aging.<br /><br />22oz for a porterhouse is indeed fairly small!
