I think the so-called success of fusion food ...KC,<br /><br />I think the so-called success of fusion food is because Westerners, who don't have much knowledge about authentic Asian food, TOTALLY buy it! They just love fusion food, which is why it gets so popular in Europe and America.<br /><br />That said, fusion got a bad rap because it was being over-exposed, to the point where chefs who know very little of Asian cuisines start to sell fusion food. Thinking about it, I worry that Chinese cuisine is also turning into bad fusion, as a lot of Chinese chefs who know just little of Western cuisines starting to put black/white truffles, foie gras, etc. to their food... <br /><br />Fusion can be good if the chef truly understands how to balance the flavors from different cuisines without losing the original delicate intricacy.
