I agree that I am one of those who like "...KC,<br /><br />I agree that I am one of those who like "稔身一點,味道又甜一點的,如富聲又或是西苑的". 西苑 is already a bit firmer in texture compared to 富聲, and I realize that most of the contemporary Chinese restaurants tend to have the softer version of 叉燒 perhaps exactly because it appeals to more customers. Older and more traditional places like 燒味舖 usually have the firmer version. But I think sometimes unless we order by picking the section you want (like you said), it's a little luck as the same place may give you 較硬身 or 較稔身of 叉燒 on different days!<br /><br />But I do agree with you that it is hard to find a 坐得舒服 and 服務很不錯 的燒味舖!
